A Guided Evening with Nick Bernstein

Crabtree Kitchen + Bar is honored to host an exclusive evening with DeLille Cellars, one of Washington State’s most celebrated wineries. This five-course dinner pairs the craftsmanship of our culinary team with DeLille’s world-class wines for an unforgettable dining experience.

Guiding the evening is Nick Bernstein, Winemaker at DeLille Cellars. Nick’s journey into winemaking began with a degree in Biology at the University of Washington, focusing on ecology and botany. His curiosity took him from Walla Walla to Marlborough, Sonoma, and Santa Barbara, immersing himself in harvests and vineyard life. In 2012, Nick joined DeLille, where he advanced from cellar work to Assistant Winemaker, before becoming Winemaker in 2019. Drawing from global influences and over a decade of hands-on experience, Nick brings passion, technical expertise, and a deep respect for Washington’s terroir to every bottle.

Course One — Paired with Chaleur Blanc (2022)
Crab Slider — Squid Ink Brioche Bun with Miso Wasabi Aioli, Crab Salad with Pickled Mustard Seed, Dungeness Crab, Sour Apple Aioli, Candied Apple, Duck Fat Fries, and House Mustard Tartar Sauce.

Course Two — Paired with D2 Red Blend (2022)
Chicken and Cherries — Chicken Mousse wrapped in Crispy Skin, misted with Orange Syrup, and served with Cherry Coke Gastrique, Fennel Beurre Blanc, and Golden Beet Purée.

Course Three — Paired with Doyenne CLRS (2021)
Mussels in Bacon Dashi — Penn Cove Mussels in Smoky Bacon Dashi with Bacon Powder, Black Garlic Aioli, Sourdough Loaf, and Garlic Honey.

Course Four — Paired with Le Dessein GSM (2022)
Duck and Rhubarb — Pan-Seared Duck Breast with Foie Smear, Parsnip–Purple Potato Swirled Mash, Freeze-Dried Rhubarb Dust, and Dulce de Demi.

Course Five — Paired with Four Flags Cabernet Sauvignon (2021)
Chef’s Dessert — A decadent finale crafted by our pastry team to complement DeLille’s signature Cabernet Sauvignon.

Westland Distillery and Crabtree Kitchen are teaming up!

Please help us welcome Devin from Westland Distillery back for a fun Happy Hour cocktail experience on January 18th at 4:00 pm in the lounge at Crabtree Kitchen + Bar. Learn about the history behind the Old Fashioned Cocktail, try some of Westland’s newest releases, craft your own cocktail, and enjoy some fantastic sliders Chef Pat put together.

Tickets are $50 a person. 

Each guest will be welcomed and shown to their designated tables, each equipped with a "cocktail station." Each cocktail station will be set up with: a flight of Westland whiskey samples, rocks glass, a Professional Bartender's Mixing glass, a jigger, a professional bartender’s spoon, and a wooden muddler. Additionally, each table will have an assortment of at least eight different styles of cocktail bitters and five to six varieties of sugar syrups. 

The evening will begin with a brief welcome, followed by a sampling of Westland Flagship, where we will discuss the Pacific Northwest influences on Westland's production style and ingredients. This will be followed by a short video that will provide insight into the history of the Old-Fashioned Cocktail. During this video, Devin will demonstrate the correct technique and outline the various ingredient choices available. After that, the event will be devoted to guests making their own cocktails. ensuring a hands-on experience. To wrap up the evening, guests will be able to eat and mingle while enjoying the cocktails they created!
